Using the sous vide to make an infusion is such a fun way to spice things up in your kitchen and just another reason that the sous vide is amazing!

What is a Sous Vide Infusion?
The process of sous vide cooking is heating a water bath up to a specific temperature and keeping it there for a specific period of time. Doing this allows for whatever is being cooked to stay at an exact temperature for a certain amount of time cooking and being held at that temperature. Because the water is circulating all around the food item, it gets evenly cooked throughout while maintaining the right temperature - ensuring no over or undercooking.
Sous vide infusions are extracting flavors of something into a liquid - cooking something at a higher temperature than room temp, allowing whatever flavor to be exctracted quicker.
So in the case of this recipe - we are wanting to infuse the flavors of garlic and rosemary into the olive oil. If you put those items in the olive oil and set them on the counter, it would take much longer for that to happen. But by doing this process in the sous vide, you can infuse those flavors in 3 hours.

- Heat a water bath up to 131 degrees using sous vide.
- Combine all the ingredients in a bag sealed with the Vesta Precision chamber vac or in a mason jar sealed to just fingertip tightness.
- Place in the sous vide bath and cook for 3 hours.
- Once finished, place it into a clean mason jar or a liquid container with a lid. Use wherever you would normally use olive oil when cooking.
