    Chicken Bites with Honey Buffalo Sauce

    Healthy Chicken Bites with Honey Buffalo Dipping Sauce are the perfect addition to any Super Bowl party or any get-together.

    Did you know that Super Bowl Sunday is the second biggest "food holiday" in America? Only behind Thanksgiving. The number of wings, pizza, beer, chips & dip consumed will blow your mind! It's kinda crazy...we love our football and we love our food!

    To lighten the normal heavy load of calories and give a healthier but still insanely delicious non-veggie option, these healthy chicken bites with honey buffalo dipping sauce are going to blow your mind!

    One, who can resist a chicken nugget? And two, who can resist said nugget with a dipping sauce? I think Chick-Fil-A has built an empire solely on that combo right there (and I am about it!). These healthy chicken bites may be lower in calories but we aren't skimping on the flavor at all!

    How to Prep the Chicken Nuggets

    All you will need is some boneless skinless chicken breast or tenderloins. Cut them up into bite-size nuggets pieces and season with salt and pepper. Then you are going to dunk the bites in a bowl of whisked eggs so that they will stick to the whole wheat panko mixture.

    Place on a baking sheet and bake. That's it! Less than 10 ingredients for the whole recipe!

    How to Make the Honey Buffalo Sauce

    To make the dipping sauce you will need to melt a small amount of butter in a bowl (don't worry, it isn't that much so it's not throwing off the whole healthy thing) and whisk together with buffalo sauce and honey.

    Pour into a bowl to serve alongside the healthy chicken bites once they are finished baking and waa-laa, you're done!

    This recipe is super easy to double if you are feeding a large crowd, but this recipe alone is enough for 10-12 people. Place them on a tray with some toothpicks and let your guests graze guiltlessly as they cheer on their favorite team.

    Healthy chicken bites will be an all-around hit while you're watching the big game and leaving everyone feeling a little bit better about their waistline.

    Ingredients

    Scale

    For the Chicken

    • 2 Pounds Boneless Skinless Chicken Breast or Tenderloins
    • 2 Cups Whole Wheat Panko Crumbs
    • 1 Tablespoon Garlic Powder
    • 3 Eggs
    • Salt and Pepper

    For the Sauce

    • 1 Tablespoon Butter - melted
    • ½ Cup Hot Sauce
    • 3-4  Tablespoons Honey

    Instructions

    For the Chicken

    1. Preheat the oven to 400 degrees.
    2. With clean hands, cut the chicken into bite-size nuggets pieces and add to a large bowl. Season with salt and pepper, making sure to coat each piece.
    3. In a bowl add in 3 eggs and whisk until beaten.
    4. In another large bowl, add in panko crumbs and garlic powder, mixing to combine.
    5. Line a baking sheet with foil, parchment paper, or a silicone mat.
    6. Take the chicken and dip it into the eggs, a coating on all sides. Place in the panko mixture and coat all sides evenly. Place on baking sheet.
    7. Repeat until all nuggets are coated in egg wash then in panko crumbs.
    8. Place in oven and bake for 20 - 25 minutes until chicken is tender and the outside is golden brown.
    9. Allow to cool and enjoy with honey buffalo sauce!

    For the Sauce

    1. Place butter in a microwave-safe bowl and melt. Add in hot sauce and honey and whisk to combine everything.
    2. Serve in a bowl alongside chicken nuggets bites
