    Healthy Sausage Balls

    I have some friends who are amazing cooks and bakers! It really is the best. I love seeing their creations and goodies, talking about our latest cooking endeavors and sometimes being on the receiving end of the yumminess!

    These Healthy Sausage Balls are courtesy of my dear friend Morgan and her mom. I saw this picture on their Instagram page, Kindred Kitchen, and immediately knew I needed to make these ASAP. I am always looking for something bite size and healthy to make for on the go breakfast and this was a perfect fit. I have made these 5 times since for Justin and I and we are hooked!

    At the first bite, these instantly reminded me of sausage balls. You know the ultimate southern bridal shower or brunch menu item?! Yeah, those! I can consume 20 of them no problem and they are one of my favorite things on the planet. I almost fell on the floor when I was eating these flavorful little bites and doing a dance in my kitchen over a low-carb more healthy version of sausage balls.

    This couldn't be easier to throw together either. One bowl, toss all the ingredients in. Mix until well combined and scoop out onto a baking sheet. Cook for 30-35 minutes and patiently wait to eat until they have cooled for 5 minutes. You will be shocked at how much flavor is packed in these little babies.

    Healthy Sausage Balls are perfect for breakfast on the go or a quick protein packed snack. I usually make a batch, store half in the refrigerator to eat on and then put the other half in the freezer until we are ready for them. They are fast, loaded with veggies and you will be singing their praises just like me.

    Description

    These healthy sausage balls are a new twist on the traditional favorite. Low carb and loaded with flavor, these little bite-size snacks make a perfect breakfast and snack throughout the day!


    Ingredients

    Scale
    • 1 Pound Italian Sausage
    • ¾ Cup Almond Flour
    • 3 Eggs
    • 8 Ounces Frozen Pepper Mix
    • 1 Cup Cheddar Cheese, shredded
    • ¼ Cup Green Onion (about 4 onions)
    • 1 Teaspoon Garlic Powder
    • ½ Teaspoon Salt
    • ½ Teaspoon Pepper

    Instructions

    1. Preheat oven to 350 degrees.
    2. Place 8 ounces of the frozen pepper blend in a skillet with a drizzle of olive oil and saute until soft, about 5-7 minutes. Remove from heat and let cool.
    3. In a large bowl combine all ingredients. Mix well until all ingredients are thoroughly mixed and combined,
    4. Using a small ice cream scoop, scoop out balls onto baking sheet lined with parchment paper.
    5. Place in preheated oven and cook for 30-35 minutes, until pork is cooked all the way through.
    6. Remove from oven and let cool. Enjoy!
    7. Store in airtight container in the refrigerator for up to 5-6 days. Can also be frozen for up to 3 months.
