    Raspberry Crumble Bars

    Raspberry Crumble Bars are a buttery, fruity, melt in your mouth dessert that will have you coming back for more and more.

    Y'all. Hello. Raspberry Crumble Bars may be my fav dessert right now.

    Berries are in the peak of their season and I can't get enough. We are taking inspo from their tart and sweet flavors and making buttery bar dessert that will blow everyone away.

    They are simple to make and feed a crowd. Lets get baking!

    Ingredients Needed for Raspberry Crumble Bars

    For the Crust

    • Butter
    • Sugar
    • Powdered Sugar
    • Vanilla
    • Flour
    • Slivered Almonds

    For the Filling

    • Raspberry Preserves

    How To Make Raspberry Crumble Bars

    Step 1

    Mix the butter, sugar, powdered sugar, vanilla, and flour in a mixer to make the shortbread crust.

    Step 2

    Reserve ⅓ of the shortbread crust for the topping. Spread the remaining out onto a 9x13 baking sheet and press firmly down. Bake for 20 minutes.

    Step 3

    After baking, remove from the oven and spread out a jar of raspberry preserves over top and spread out evenly across.

    Mix the remaining ⅓ of the shortbread crust with slivered almonds and crumble over the top of the raspberry preserves. Bake for 25 to 30 minutes.

    Step 4

    Let cool completely before cutting into squares and enjoying!

    Can I Use Different Types of Jams Instead of Raspberry?

    Absolutely!

    Any type of fruit preserve would work. If you can't find perseveres, I would use jams instead of jellies.

    Strawberry, blackberry, and peach perserves would be incredible!

    How Do You Freeze and Store These Bars?

    Once you have baked raspberry crumble bars, let cool completely. You can either wrap the entire baking sheet pan tightly with plastic wrap multiple times (until air tonight) and store in the freezer for up to 6 months.

    You can also cute into squares and store them in the freezer the same way as the whole pan.

    To just store leftovers, place in an airtight container, and keep in the fridge for a week.

    Raspberry Crumble Bars are a buttery, fruity, melt in your mouth dessert that will have you coming back for more and more.


    Ingredients

    Scale

    For Crust

    • 2 Sticks Salted Butter - at room temp
    • ½ Cup Sugar
    • ¾ Cup Powdered Sugar
    • 1 Tablespoon Vanilla
    • 2 Cups Flour
    • 1 Cup Slivered Almonds - for the topping

    For Filling

    • 18 Ounces Raspberry Preserves

    Instructions

    1. Preheat the oven to 325 degrees.
    2. In a stand mixer, add your butter and beat until fluffy. Add in sugar and powdered sugar and mix for 2 minutes until light and fluffy.
    3. Add in the vanilla and flour and mix until just combined. This will be very crumbly dough and texture. Reserve ⅓ of the dough for later.
    4. In a 9x13 baking sheet (a quarter size sheet pan), lay down parchment paper that hangs over the sides. Place ⅔ of the crust mixture on top of the parchment paper and press down firmly with your hands. Spread out into the corners making sure there is an even layer across the pan. Pack the shortbread crust down until well packed.
    5. Bake for 20 minutes.
    6. Remove from the oven and pour out the raspberry preserves onto hot crust. With a spatula, spread out evenly.
    7. With the remain ⅓ of the crust add in 1 cup of slivered almonds and sprinkle all over the top of the spread raspberry perseveres. Put back into the oven and bake for another 25-30 minutes. the topping will be firm and lightly golden brown.
    8. Let cool completely before slicing into squares.
