Raspberry Crumble Bars

Raspberry Crumble Bars are a buttery, fruity, melt in your mouth dessert that will have you coming back for more and more.



For Crust

  • 2 Sticks Salted Butter - at room temp
  • 1/2 Cup Sugar
  • 3/4 Cup Powdered Sugar
  • 1 Tablespoon Vanilla
  • 2 Cups Flour
  • 1 Cup Slivered Almonds - for the topping

For Filling

  • 18 Ounces Raspberry Preserves


  1. Preheat the oven to 325 degrees.
  2. In a stand mixer, add your butter and beat until fluffy. Add in sugar and powdered sugar and mix for 2 minutes until light and fluffy.
  3. Add in the vanilla and flour and mix until just combined. This will be very crumbly dough and texture. Reserve 1/3 of the dough for later.
  4. In a 9x13 baking sheet (a quarter size sheet pan), lay down parchment paper that hangs over the sides. Place 2/3 of the crust mixture on top of the parchment paper and press down firmly with your hands. Spread out into the corners making sure there is an even layer across the pan. Pack the shortbread crust down until well packed.
  5. Bake for 20 minutes.
  6. Remove from the oven and pour out the raspberry preserves onto hot crust. With a spatula, spread out evenly.
  7. With the remain 1/3 of the crust add in 1 cup of slivered almonds and sprinkle all over the top of the spread raspberry perseveres. Put back into the oven and bake for another 25-30 minutes. the topping will be firm and lightly golden brown.
  8. Let cool completely before slicing into squares.
