    Spinach & Turkey Meatballs

    Back again with another healthy January recipe! Spinach and Turkey meatballs are the perfect addition to any salad, dinner, appetizer or honestly just great for plain ole' snacking.

    I have been making these for a long time. I like to make up a big batch for Justin and me to have on hand all week. We always need a quick and healthy something in the fridge for a meal/snack on the go or an "I am hungry, what do we have in the fridge" mid-afternoon snack. I know you feel me on that one. 🙂

    They are super quick and easy to make and so delicious! My favorite ways to eat are just as cold as a snack or making a super quick dinner with zucchini noodles, a jar of marinara and throwing a couple of these on top with some parm. It comes together in 10 minutes and it's healthy and insanely delicious. Definitely a weeknight victory around here.

    AND this a one bowl recipe! Grab a pair of kitchen gloves or wash your hands and remove your rings because we are getting messy. Place all ingredients in the bowl and mix throughly with your hands. The only “prep” work in this is sitting out the frozen spinach a day before in the fridge to thaw (set it in a bowl so water doesn’t get all over your fridge) and making oat flour. 

    To make oat flour:

    1. Place ½ cup old fashion oats in a blender or food processor.
    2. Pulse/blend until its finely milled flour.
    3. Dump in meatball bowl.

    So easy. Once everything is mixed well, scoop out balls with a cookie scoop or shape them into evenly sized balls with your hands.

    Place in a baking sheet and baked until golden brown. Eat right away and then store your leftovers in because the fridge to enjoy the whole week. Easy peasy!

    Description

    Spinach & Turkey Meatballs are a perfect addition to any salad, dinner, a great snack or a perfect appetizer!


    Ingredients

    Scale
    • 1 ½ - 2 Pounds Ground Turkey
    • ½ Cup Oat Flour
    • 10 Ounces Frozen Spinach
    • ½ Cup Freshly Grated Parmesan
    • 2 Eggs
    • 1 Tablespoon Olive Oil
    • ½ Teaspoon Salt
    • ½ Teaspoon Pepper
    • 1 Teaspoon Italian Seasoning
    • ¾ Teaspoon Garlic Powder

    Instructions

    1. Preheat oven to 400 degrees.
    2. Defrost frozen spinach. Squeeze and drain as much liquid out as possible.
    3. To make oat flour: add ½ cup of old fashion oats in a blender or food processor. Pulse until finely ground into a flour.
    4. In a large bowl add in all the ingredients. I prefer using my hands to mix together and wear kitchen gloves to do so - this can also just be done with a spoon. Mix together until everything is evenly distributed and mixed well. Especially the spinach.
    5. Using a cookie scoop, scoop out meatballs onto a baking sheet lined with parchment paper or foil and sprayed with non-stick cooking spray.
    6. Place in oven and bake for 25-30 minutes.
    7. Enjoy!

    Notes

    • These can also be frozen. Cook and cool completely. Place cooled meatballs in a freezer safe gallon ziplock bag and freeze for up to 3 months. Sit in the refrigerator for 24 hours to thaw and just pop them in the oven or microwave to warm back up.
    • These are perfect hot, cold or at room temp.
