Spinach & Turkey Meatballs

Spinach & Turkey Meatballs are a perfect addition to any salad, dinner, a great snack or a perfect appetizer!


  • 1 1/2 - 2 Pounds Ground Turkey
  • 1/2 Cup Oat Flour
  • 10 Ounces Frozen Spinach
  • 1/2 Cup Freshly Grated Parmesan
  • 2 Eggs
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Italian Seasoning
  • 3/4 Teaspoon Garlic Powder


  1. Preheat oven to 400 degrees.
  2. Defrost frozen spinach. Squeeze and drain as much liquid out as possible.
  3. To make oat flour: add 1/2 cup of old fashion oats in a blender or food processor. Pulse until finely ground into a flour.
  4. In a large bowl add in all the ingredients. I prefer using my hands to mix together and wear kitchen gloves to do so - this can also just be done with a spoon. Mix together until everything is evenly distributed and mixed well. Especially the spinach.
  5. Using a cookie scoop, scoop out meatballs onto a baking sheet lined with parchment paper or foil and sprayed with non-stick cooking spray.
  6. Place in oven and bake for 25-30 minutes.
  7. Enjoy!


  • These can also be frozen. Cook and cool completely. Place cooled meatballs in a freezer safe gallon ziplock bag and freeze for up to 3 months. Sit in the refrigerator for 24 hours to thaw and just pop them in the oven or microwave to warm back up.
  • These are perfect hot, cold or at room temp.
