Description
Herbed Grilled Chicken is a recipe that will be a go-to all summer long. Fresh summer herbs make this juicy grilled chicken out of this world good!
Ingredients

- 1 Pound of Chicken (boneless skinless chicken breast or bone-in skin-on chicken thighs - whatever your preference)
- 1 Tablespoon Olive Oil
- Juice of 1 Lemon
- 2 Cloves of Garlic - minced
- Parsely
- Basil
- Chives
- Oregano
- Salt and Pepper
Instructions
- Preheat the grill to 350 degrees.
- Add the chicken to a large bowl. Pour over olive oil and lemon juice.
- Mince 2 cloves of garlic and finely diced all of the herbs. Add to the chicken.
- Sprinkle a big pinch of salt and freshly cracked black pepper on top and toss to coat the chicken.
- Place the chicken on the grill, and let it cook on that one side for about 10 minutes. You will start to see the white come up the sides of the chicken. Once it looks like the chicken is almost white all the way up, turn over and cook on the other side for 5 more minutes. The juices will start running clear off the top and that will be another indicator letting you know that the chicken is done cooking but is juicy and not overcooked. Depending on how thick or thin your chicken breast depends on how long it will need to cook, but generally, this will take around 15 minutes total.
- Remove and let rest for 5 minutes then enjoy!
Notes
- I often time switch up the herbs depending on what I am growing in my garden. It is usually a blend of basil, chives, and oregano but I will also throw in dill, rosemary, thyme, or parsley if I have some or growing it too.
- You can also let this marinate in the fridge for 30 minutes or up to 24 hours. Just tightly wrap the bowl with plastic wrap, store in the fridge until needed.
