- 2 Pounds of Pork Tenderloin
- Salt and Pepper
- 1 Pound Bacon (or 10-12 slices)
- 1 Cup Peach Perserseves
- 2 Tablespoons Dijon Mustard
- 1 Tablespoon Apple Cider Vinegar
- 1/2 Teaspoon Ground Thyme
Instructions
- Preheat the oven to 400°F.
- Season the pork tenderloin with salt and pepper. Wrap the bacon slices around the tenderloin, securing the ends with toothpicks. It should take 5-6 pieces of bacon per tenderloin.
- Place the bacon-wrapped pork on a baking sheet and place in the oven for 20 minutes.
- While roasting, add the peach preserves, Dijon mustard, apple cider vinegar, and thyme in a small saucepan. Bring to a simmer over medium heat for 5-7 minutes until thickened. Turn on low and stir every so often until needed.
- Remove the pork, and brush the peach preserves over the top. Place back in the oven and roast for another 10-15 minutes.
- Remove, slice, and serve!
