Description

The tenderloin is wrapped in bacon and then brushed with a sweet, tangy peach glaze made with just four ingredients. Ingredients

  • 2 Pounds of Pork Tenderloin
  • Salt and Pepper
  • 1 Pound Bacon (or 10-12 slices)
  • 1 Cup Peach Perserseves
  • 2 Tablespoons Dijon Mustard
  • 1 Tablespoon Apple Cider Vinegar
  • 1/2 Teaspoon Ground Thyme


Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and pepper. Wrap the bacon slices around the tenderloin, securing the ends with toothpicks. It should take 5-6 pieces of bacon per tenderloin.
  3. Place the bacon-wrapped pork on a baking sheet and place in the oven for 20 minutes.
  4. While roasting, add the peach preserves, Dijon mustard, apple cider vinegar, and thyme in a small saucepan. Bring to a simmer over medium heat for 5-7 minutes until thickened. Turn on low and stir every so often until needed.
  5. Remove the pork, and brush the peach preserves over the top. Place back in the oven and roast for another 10-15 minutes. 
  6. Remove, slice, and serve!
