Bacon Wrapped Pork Tenderloin with Peach Glaze

The never-ending dinner decisions

Y'all...decision fatigue is a REAL THING. For me, it has grown exponentially after having our first child. Wow. Like can I have 5-6 business days without making any decisions, please?

The worst decision of them all (IMO) is what to make for dinner. Every. Single. Day. (And yes even as a food blogger and Southern cook - this part of life is just hard and I think we all can relate to that).

Yeah yeah, I know, meal plan. I used to be very good at that. And I am trying to find my grove again. But ya know, like I mentioned above - the whole having a kid thing - ya get it.

So right now, one of my personal goals is to find dinners we all love and that are quick and easy to do (bonus points if I write it down to remember for next week lol). And this pork tenderloin wrapped in bacon was a big hit.

It's simple, roasted in the oven for 35 minutes, full of flavor, and pairs well with asparagus, cheddar grits, or bacon mac and cheese. Let me show you how I like to do it in our home.

Welcome to my kitchen, let us make dinner together!

Place your pork tenderloin on a baking sheet lined with parchment paper. Sprinkle the entire thing with some salt and pepper.

Start wrapping pieces of bacon around the tenderloin starting at the top and only overlapping slightly so no tenderloin is exposed. Secure the ends with toothpicks to help keep them in place.

This will take 5-6 pieces of bacon. Wrap the second tenderloin the same way. Place in a preheated oven at 400 for 20 minutes.

While the first roast is going, make the peach glaze. Add peach preserves, dijon mustard, apple cider vinegar, and thyme to a pot on the stove over medium heat.

Bring to a low simmer over medium heat for about 5-7 minutes - just to thicken slightly. Then turn on low heat stirring every so often.

Once the 20 minutes is up, take the pork out and generously brush the glaze over top. Place back in the oven to finish roasting for 10-15 more minutes.

⭐️After testing this several times (and burning a batch 🤦‍♀️), I found it best to brush the glaze on midway through. This way it won't burn or caramelize too much because of the sugar in the peach preserves. And it allows the bacon to cook a bit too. It is a delicate balance of cooking the bacon/not over-caramelizing with the glaze/making sure the pork is tender and juicy and not dry. This method helps with that.

After the time is up, remove from the oven place the tenderloins on a cutting board, and slice. This way everyone can grab the amount they want! Serve immediately while warm - but this also makes delicious leftovers. If you're like my husband, you'll just eat it cold out of the fridge with your fingers. 😉

  • 2 Pounds of Pork Tenderloin
  • Salt and Pepper
  • 1 Pound Bacon (or 10-12 slices)
  • 1 Cup Peach Perserseves
  • 2 Tablespoons Dijon Mustard
  • 1 Tablespoon Apple Cider Vinegar
  • ½ Teaspoon Ground Thyme


Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and pepper. Wrap the bacon slices around the tenderloin, securing the ends with toothpicks. It should take 5-6 pieces of bacon per tenderloin.
  3. Place the bacon-wrapped pork on a baking sheet and place in the oven for 20 minutes.
  4. While roasting, add the peach preserves, Dijon mustard, apple cider vinegar, and thyme in a small saucepan. Bring to a simmer over medium heat for 5-7 minutes until thickened. Turn on low and stir every so often until needed.
  5. Remove the pork, and brush the peach preserves over the top. Place back in the oven and roast for another 10-15 minutes. 
  6. Remove, slice, and serve!
