Chewy Cornflake Peanut Butter Balls

Description

These chewy, sticky little bites of candy-like goodness come together in just 20 minutes with four pantry staples—cornflake cereal, peanut butter (don't even think about using the natural stuff in this recipe!), corn syrup, and white sugar. Boiled up on the stove for seven minutes, then scooped into sweet little balls to set on the counter, they're the perfect treat when you’re craving something quick and easy (and no chocolate is used here). Betcha can’t eat just one!


Ingredients

  • 1 Cup Sugar
  • 1 Cup Peanut Butter - creamy
  • 1 Cup Corn Syrup
  • 6 Cups Cornflake Cereal


Instructions

  1. To a medium size pan, add the sugar, peanut butter, and corn syrup. Place on the stove and turn on medium heat.
  2. Start a timer for 7 minutes. During that 7 minutes, stirring often. Around 5 minutes everything should be melted together, the sugar dissolved, and tiny bubbles will start to pop up.
  3. Once the 7 minutes is up and you can see bubbles in the middle of your pan, remove from the heat and add in the cornflakes.
  4. Stir until well combined and the peanut butter mixture coats over all the cornflakes.
  5. Using a cookie scoop, scoop out balls onto wax or parchment paper. 
  6. Once you have scooped all the balls, either spray your hands with non-stick cooking spray or wear disposable kitchen gloves, form the balls you just scooped into tighter round balls with your hands. You will have some time to do this while the peanut butter balls are still warm. Pack the balls tightly and then let them cool.
  7. Once they have cooled and set, enjoy!

Notes

  • Store these in an air-tight container or bag for 4-5 days. This will help keep them fresh and soft longer.
