Ingredients
- 1 Pound Ground Beef
- 1 Onion - finely diced
- 2 Garlic Cloves - minced
- 1 Tablespoon Chili Powder
- 1 Tablespoon Cumin
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 2 - 4 Ounce Can of Diced Green Chilies
- 15-16 6" Corn Tortillas
- 15-20 Ounces Enchilada Sauce (I use Siete brand)
- 2 Cups Cheddar Cheese - shredded
Toppings - sour cream, salsa, avocado, guacamole, hot sauce, cilantro, lime wedges, additional shredded cheese
Instructions
- Preheat the oven to 350 degrees.
- To a large skillet, add the ground beef, onion, and garlic. Cook for 10 minutes or until the ground beef is cooked all the way through - breaking up with a meat chopper into fine pieces as you cook.
- Drain off the excess fat and add back into the skillet with the spices and green chilies. Cook for 2-3 more minutes then remove from the heat.
- Spray and 9x13 pan with cooking spray. Spread a small amount of enchilada sauce on the bottom of the pan. Layer with 5-6 corn tortillas. Add half of the ground beef mixture evenly on top. Sprinkle 1/3 of the cheese and then drizzle a little more enchilada sauce. Repeat that layering again and then end with the last tortillas, sauce, and cheese on top (layering should look like the following: sauce, tortilla, beef, cheese, sauce, tortilla, beef, cheese, sauce, tortilla, sauce and cheese).
- Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes.
- Remove and serve with salsa, avocado or guacamole, sour cream, hot sauce, cilantro, or any of your favorite taco toppings.
Notes
- Leftovers can be kept for 2-3 days covered in the fridge.
- You can add additional ingredients like black beans and corn to your beef mixture too if desired.
