Description
You can never go wrong with a Strawberry Spinach Salad. The goat cheese, pecans, and red onions have just added a bonus to all the yummy flavors of my favorite salad.
Ingredients
Scale
- 3-4 Cups Spinach
- 1-1.5 Cups Strawberries
- 1/4 - 1/2 Cup Red Onion
- 5oz Goat Cheese
- 1/4 Cup Pecans
Dressing:
- 1/2 Cup EVOO
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Maple Syrup
- 1/4 Cup Balsamic Vinegar
- Pinch of Salt & Pepper
Instructions
- Wash and dry strawberries. Slice.
- Using a mandolin or knife, thinly slice red onion and cut into quarters.
- In a large bowl layer spinach, strawberries, red onion, pecans and crumbled goat cheese.
- In a mason jar add all dressing ingredients. Close the lid and shake to combine (about 10 seconds).
- Serve immediately and drizzle dressing on top. Also great to be served with chicken, shrimp or salmon.
