Description

Bowtie chicken pasta salad is the perfect dish to bring to any party or cookout. Quick and easy and a delicious zesty herb dressing to bring it all together!


Ingredients

Salad

  • 1 Pound Bowtie Pasta
  • 2 Pounds Cooked Chicken - cubed (about 5-6 cups)**
  • 8 Ounces Italian Salami - cubed
  • 8 Ounces Mozzarella Pearls
  • 1 Red Bell Pepper - diced
  • 1/2 Bunch Green Onion - finely sliced

Dressing

  • 1/2 Cup Olive Oil
  • Juice of 2 Lemons (about 3-4 Tablespoons)
  • 3 Tablespoons Honey
  • 1 Garlic Clove - minced
  • 1 Tablespoon Fresh Chives
  • 3/4 Teaspoon Salt
  • 1/2 Teaspoon Dried Dill
  • 1/2 Teaspoon Pepper
  • 1/4 Teaspoon Red Pepper Flakes

Instructions

  1. Bring a large pot of water to boil and salt liberally. Add in 1 pound of bowtie pasta and cook for 8 minutes (do not overcook). Once finished, drain, and add to a large bowl.
  2. Chop and cube cooked chicken breast. Add to bowl.
  3. Cube salami and add to the bowl along with the mozzarella pearls, diced red pepper, and green onions.
  4. In a separate bowl, add all the ingredients for the dressing. Whisk to thoroughly combine.
  5. Pour dressing over pasta salad and toss, making sure everything is evenly coated.
  6. Serve immediately or place in the fridge until needed.

Notes

  • For the chicken, you can cook your own by roasting boneless skinless chicken breast in the oven at 350 for 20-25 or until cooked all the way through, seasoned with olive oil, salt, and pepper. Or this is a great way to use up any leftover chicken you may have. Or, use a rotisserie chicken. Shred and cube about 5-6 cups. Whatever is easiest you can do!
  • Serve this warm, room temp, or place it in the fridge to chill and serve.
  • Leftovers can be kept wrapped airtight in the fridge for 2 days.
