- Chop and cube cooked chicken breast. Add to bowl.
- Cube salami and add to the bowl along with the mozzarella pearls, diced red pepper, and green onions.
- In a separate bowl, add all the ingredients for the dressing. Whisk to thoroughly combine.
- Pour dressing over pasta salad and toss, making sure everything is evenly coated.
- Serve immediately or place in the fridge until needed.
Notes
- For the chicken, you can cook your own by roasting boneless skinless chicken breast in the oven at 350 for 20-25 or until cooked all the way through, seasoned with olive oil, salt, and pepper. Or this is a great way to use up any leftover chicken you may have. Or, use a rotisserie chicken. Shred and cube about 5-6 cups. Whatever is easiest you can do!
- Serve this warm, room temp, or place it in the fridge to chill and serve.
- Leftovers can be kept wrapped airtight in the fridge for 2 days.
