Description

Y'all, these apple cider glazed pork chops are the perfect cozy weeknight dinner that is also fancy enough to serve to guests! Made in a large skillet, the pork chops soak up all the flavors from the simple apple cider glaze, with diced Granny Smith apples, onion and garlic. It’s an easy, one-pan wonder finished in less than an hour that fills the kitchen with those warm, homey smells, making it a dish you'll want to make again and again.


Ingredients

  • 4 Bone-In or Boneless Pork Chops (about 1 inch thick)
  • 1 Tablespoon Olive Oil
  • Salt and Pepper *
  • 1/2 Medium Sized Onion - diced
  • 2 Small Granny Smith Apples - diced
  • 1 Clove Garlic - minced
  • 1 Cup Apple Cider
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Butter
  • 1 Teaspoon Fresh Rosemary - minced 
  • 1 Teaspoon Fresh Thyme (or 1/2 teaspoon dried) - minced
  • more salt and pepper to taste

Instructions

  1. Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 5-7 minutes on each side until golden brown. Remove from the skillet and set aside (they don’t need to be fully cooked yet).
  3. In the same skillet, reduce the heat to medium and in the apples, onion and garlic. Saute for a couple of minutes until the onions start to become soft.
  4. Add the apple cider, apple cider vinegar, brown sugar, Dijon mustard, butter, rosemary, and thyme. Stir to combine and bring to a simmer for 5-7 minutes.
  5. Once the glaze has shimmered, return the pork chops to the skillet, spooning some of the glaze over the top. Cook for an additional 5 minutes per side, basting the pork chops with the glaze, until the internal temperature reaches 145°F (63°C). Season with more salt and pepper if needed.
  6. Serve the pork chops with the glaze and apples spooned over top.
