Ingredients
Scale
- 4 Bone-In or Boneless Pork Chops (about 1 inch thick)
- 1 Tablespoon Olive Oil
- Salt and Pepper *
- 1/2 Medium Sized Onion - diced
- 2 Small Granny Smith Apples - diced
- 1 Clove Garlic - minced
- 1 Cup Apple Cider
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Butter
- 1 Teaspoon Fresh Rosemary - minced
- 1 Teaspoon Fresh Thyme (or 1/2 teaspoon dried) - minced
- more salt and pepper to taste
Instructions
- Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 5-7 minutes on each side until golden brown. Remove from the skillet and set aside (they don’t need to be fully cooked yet).
- In the same skillet, reduce the heat to medium and in the apples, onion and garlic. Saute for a couple of minutes until the onions start to become soft.
- Add the apple cider, apple cider vinegar, brown sugar, Dijon mustard, butter, rosemary, and thyme. Stir to combine and bring to a simmer for 5-7 minutes.
- Once the glaze has shimmered, return the pork chops to the skillet, spooning some of the glaze over the top. Cook for an additional 5 minutes per side, basting the pork chops with the glaze, until the internal temperature reaches 145°F (63°C). Season with more salt and pepper if needed.
- Serve the pork chops with the glaze and apples spooned over top.
