Is there anything better in the fall than sitting down around the table to a cozy bowl of white chicken chili with huge chunks of skillet cornbread to dunk in? Or what about a warm bowl of stick-to-your-bones potato soup? Or even the creamiest mac and cheese?

OK, I am done. Y'all get the picture I am trying to paint.

As a Southern cook (or really anyone!), when the temps cool down our bodies crave comfort and warm filling foods. Recently my family has been loving these pork chops drenched in an apple cider glaze and diced apples on top. I served it with cheesy bacon grits and bless it! We are fat and happy!

This simple meal is perfect for weeknight dinners but also fancy enough to serve to guests coming over. It's all made in one large skillet on the stove in under an hour. But honestly, that makes it sound much more complicated than it is. Just let me show you in my own kitchen how I like to make this!

First, you want to season each side of the pork chops with salt and pepper. I don't measure this, just give a good sprinkle on each side.

When I was recipe testing this, I used both bone-in and boneless pork chops and they both worked great - so just use what you prefer here!

Drizzle some olive oil in a large skillet and turn the stove on medium-high heat.

Sear each side for 5-7 minutes - until each side has some golden brown coloring to it.

Once done, remove and set aside on a plate for later. They will not be cooked all the way through but that's ok - they will finish later.

While the pork chops are searing, prep your apples and onions by dicing them and then mince your garlic. Also, chop the herbs if you're using fresh herbs here.

 🍏 Why use Granny Smith apples? 🍏 99% of the time if I am baking or cooking any kind of apple recipe, I am using granny smith apples. Why? Well for one that's what my mom uses and she taught me to cook. But also she taught me that they hold up when baking. They do not become mush or disintegrate into whatever dish you're making but hold their shape, taste, and their distinct tart flavor stands out and compliments what it is paired with. Especially with something sweet.

Turn the heat down to medium and add in the onion, garlic, and the rest of the glaze ingredients.

Add in the apples and bring to a shimmer. Cook for 5-10 minutes allowing the onions and apples to soften.

  • 4 Bone-In or Boneless Pork Chops (about 1 inch thick)
  • 1 Tablespoon Olive Oil
  • Salt and Pepper *
  • ½ Medium Sized Onion - diced
  • 2 Small Granny Smith Apples - diced
  • 1 Clove Garlic - minced
  • 1 Cup Apple Cider
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Butter
  • 1 Teaspoon Fresh Rosemary - minced 
  • 1 Teaspoon Fresh Thyme (or ½ teaspoon dried) - minced
  • more salt and pepper to taste


Instructions

  1. Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 5-7 minutes on each side until golden brown. Remove from the skillet and set aside (they don't need to be fully cooked yet).
  3. In the same skillet, reduce the heat to medium and in the apples, onion and garlic. Saute for a couple of minutes until the onions start to become soft.
  4. Add the apple cider, apple cider vinegar, brown sugar, Dijon mustard, butter, rosemary, and thyme. Stir to combine and bring to a simmer for 5-7 minutes.
  5. Once the glaze has shimmered, return the pork chops to the skillet, spooning some of the glaze over the top. Cook for an additional 5 minutes per side, basting the pork chops with the glaze, until the internal temperature reaches 145°F (63°C). Season with more salt and pepper if needed.
  6. Serve the pork chops with the glaze and apples spooned over top.
