Description

Frozen peanut butter stuffed dates offer a quick and satisfying snack option. Fresh dates are filled with natural peanut butter, sprinkled with flaked sea salt, and frozen, creating a delightful blend of salty and sweet flavors.


Ingredients

  • 2 Pounds (or 24-36 ounces) Fresh Medjool Dates - pits removed
  • 1-2 Cups Natural Peanut Butter
  • Flaked Sea Salt

Instructions

  1. Slice each date down the middle (like a hot dog bun) and remove the pit and end stem. Open up so the inside is exposed.
  2. Pour some peanut butter into a zip-top bag. Seal shut and snip a tiny end off one of the edges creating a piping bag. Pipe out 1/2 - 1 teaspoon of peanut butter (depending on how big or small your date is) and stuff the inside of the date.
  3. Place on a baking sheet lined with parchment paper and repeat with the remaining dates.
  4. Sprinkle sea salt on top and place in the freezer for 30 minutes.
  5. Once frozen, place in a freezer-safe bag or container and keep in the freezer. Enjoy frozen!

Notes

  • Medjool dates from Traders Joes or Costco are my favorite and personal preference. The fresh dates usually in the produce section are best for this recipe/ 
  • Make sure to stir up the peanut butter well since the recipe calls for natural peanut butter before piping it into the dates.
