    Frozen peanut butter stuffed dates offer a quick and satisfying snack option. Fresh dates are filled with natural peanut butter, sprinkled with flaked sea salt, and frozen, creating a delightful blend of salty and sweet flavors.

    Ok, today is going to be short and sweet. Frozen peanut butter stuffed dates sprinkled with sea salt speak for themselves and will be a new favorite afternoon snack of yours!

    I have been eating these for years and legit have one every single morning with my coffee. They saved me during my 1st trimester when I would feel nauseous but didn't want to eat. And I crave them in the afternoons sometimes. They are just this perfect bite of salty and sweet and chewy and satisfying and so stinking good!

    This snack all came about when we had a container of Medjool dates that I had gotten from Trader Joes a while back when I made some bacon-wrapped dates stuffed with goat cheese for a dinner party. We had some leftovers and I was thinking of ways to use them.

    I picked up our jar of peanut butter out of the fridge door (we always use natural peanut butter around here) and stuffed each date with some peanut-y goodness. Then popped them on a plate, sprinkled them with flaked salt because that sounded like a great idea, and then put them right in the freezer to firm up. Which honestly was the best decision of all.

    I talk about how my love for a salty-sweet combo is uncontrollable often. It's dangerous and I cannot be trusted. The natural sticky sweetness of the dates and the salty combo of the salt and PB is a match made in heaven. I will make these about once a month and always have a gallon-size freezer bag of them on hand. My husband is even obsessed with them!

    Ingredient Highlights

    • Fresh Medjool Dates - after making these probably close to a hundred times now, I have this down to a science of how to best make them. My favorite dates are from either Costco or Trader Joe's. You can make as much or as little of these as you want - there really isn't a strict recipe. I will make the Costco-size container at once which gives me almost a cookie sheet full of them.
    • Natural Peanut Butter - we use this because this is what we eat in our home. I think it is also best because it is not sweet like traditional peanut butter. Dates are naturally very sweet so the salty peanut butter offsets that sweetness in a nice flavor balance. Just make sure to stir it up really well so that it isn't separated before filling in the dates.
    • Flaked Sea Salt - sometimes this can be hard to find. You can use Maldon Sea Salt* or just any big flaky salt you have access to. It rounds out the flavor plus gives it a bit of a crunch on top that is divine!

    TIP - use the fresh dates that you can find in the produce section of the grocery store. I used some from a bag by the dried fruit and nut section once and they were not as good! The fresh ones give you plump and "juicy" dates that stay chewy when frozen and have the perfect texture.

    The Best and Least Messiest Way to Fill

    I have made a mess of this so many times! I used to just take a butter knife and scoop it inside each date and it just got so messy. But after a while I got smart and this is the best way (and fastest and least messy) to fill each date with peanut butter.

    • Pour some peanut butter into a zip-top bag. Seal shut and snip a tiny end off one of the edges creating a piping bag. Pipe out ½ - 1 teaspoon of peanut butter (depending on how big or small your date is) and stuff the inside of the date.

    Place these on a baking sheet lined with parchment paper as you work. Then pop the whole tray in the freezer for 30-60 minutes for them to completely freeze and firm up. Then place each one in a gallon-sized zip-top bag and keep it in the freezer. Eat straight from frozen anytime you have the craving (aka every day!)

    Ingredients

    Scale
    • 2 Pounds (or 24-36 ounces) Fresh Medjool Dates - pits removed
    • 1-2 Cups Natural Peanut Butter
    • Flaked Sea Salt


    Instructions

    1. Slice each date down the middle (like a hot dog bun) and remove the pit and end stem. Open up so the inside is exposed.
    2. Pour some peanut butter into a zip-top bag. Seal shut and snip a tiny end off one of the edges creating a piping bag. Pipe out ½ - 1 teaspoon of peanut butter (depending on how big or small your date is) and stuff the inside of the date.
    3. Place on a baking sheet lined with parchment paper and repeat with the remaining dates.
    4. Sprinkle sea salt on top and place in the freezer for 30 minutes.
    5. Once frozen, place in a freezer-safe bag or container and keep in the freezer. Enjoy frozen!

    Notes

    • Medjool dates from Traders Joes or Costco are my favorite and personal preference. The fresh dates usually in the produce section are best for this recipe/ 
    • Make sure to stir up the peanut butter well since the recipe calls for natural peanut butter before piping it into the dates.
