While we are all at home right now, let's be honest, snacking is at an all-time high. I know it is for me. I don't know how many times I have smacked my own hand to put down that "one more bite" whatever it is I am reaching for. ?
Food is comfort and I know we are all wanting that right now. Last week I wanted to make Justin and I a healthy sweet treat to have on hand for us - and not cookies because we can't be trusted with cookies just laying around.
If anyone knows my husband those cookies will be hone in 2.5 seconds!
We had a container of Medjool dates that I had gotten from Trader Joes a while back when I made some bacon-wrapped dates stuffed with goat cheese (aka one of my most fav things ever!) - and while I am trying to use up what we have in our fridge and cook wisely right now, I grabbed them to make a snack and not waste any food.
I picked up our jar of peanut butter out of the fridge door (we always use natural peanut butter around here) and stuffed each date with some peanut-y goodness.
Popped them on a plate, sprinkled them with some pink Himalayan sea salt because that sounded like a great idea, and then put them right in the freezer to firm up.
Which honestly was the best decision of all.

Plus the sea salt. Man. You had me at hello!
I talk about how my love for a salty-sweet combo is uncontrollable often. It's dangerous and I cannot be trusted. The natural sticky sweetness of the dates and the salty combo of the salt and PB is a match made in heaven.
And seriously - freezing them just takes them to the next level!
This is the perfect healthy treat when it is 2:00 pm and you want a bite of something sweet or honestly you just have your head in the fridge and pantry looking for your next snack because that is all that we are doing now. ?
Feel a little bit better about yourself going for something natural and healthy. You won't feel any guilt popping one of these bad boys in your mouth and will feel instantly satisfied.

Frozen Peanut Butter Stuffed Dates

Description
Frozen peanut butter stuffed dates with a sprinkle of sea salt are going to be your new favorite afternoon snack. Healthy, filling, and the perfect salty-sweet combo.
Ingredients
- Medjool Dates
- Natural Peanut Butter
- Sea Salt
Instructions
- Slice each date down the middle (like a hot dog bun) and remove the pit and end stem. Open up so the inside is exposed.
- With a butter knife, scoop out about ½ - 1 teaspoon of peanut butter (depending on how big or small your date is) and stuff the inside of the date.
- Place on a plate and repeat with the remaining dates.
- Sprinkle sea salt on top and place in the freezer for 30 minutes.
- Once frozen, place in a freezer safe bag or container and keep in the freezer. Enjoy!
Notes
- Medjool dates from Traders Joes are my favorite and personal preference - but you can use whatever kind of date you like or can find. You can find them next to the dried fruits and trial mix section in most grocery stores.
- We use natural peanut butter for these but any nut butter would work. Almond, cashew, sunflower - whatever you like or have! Just make sure if you are using a natural kind that you stir up the container to mix the oil back together and stick in the fridge a day before making these so that the nut butter can be more solid. It is easier to scoop and stuff the dates when it is more solid than when you first open a jar and it is more runny.
