I've been making a batch of these every 2-3 weeks since 2019, and now my whole family's hooked. We all literally eat one every morning (my sons affectionately call them date balls) and we go through them so fast! Similar to Everything Bagel Bites Stuffed with Cream Cheese or no bake cornflake peanut butter balls - this snack is an actual staple for us in our home.
I'll make a big batch on a baking sheet and then place in the freezer to flash freeze and set. Then transfer to a gallon-sized freezer bag for easy grab-and-go snacking. I eat one every morning with my coffee, and sometimes another as a little afternoon pick-me-up.
⭐️ Heather's Pro Ingredient Tips ⭐️ Since I have been making these for years, I feel like I have tried all the PB and date combos, and I have found what I think is the best of the best combos. I always use natural peanut butter because that is what we eat in our home, and hands down, Costco's brand of Kirkland's organic creamy natural peanut butter is the best there is out there - no question. Same with he dates. I find the fresh medjool dates at Costco are the best. Sometimes you can get some that are too dried and hard, or too stiff - their dates are perfect (you can find them next to the fruit and produce)! Big, juicy, and plump - they are easy to pit and fill, but most importantly, they freeze really well and turn into a soft, chewy texture when eaten frozen - nothing too hard on the teeth. I am obsessed!
Let me spare you the mess that I have made so many times! Working with natural peanut butter is not for the faint of heart. This is another reason I like the Costco PB too, because once you stir it to incorporate the oil and everything, and then put it in the fridge, it solidifies enough that it is a little easier to work with. But I have also mastered this with just the straight-up liquid peanut butter.
Place a quart-sized zip-top bag open inside a cup. Pour your peanut butter inside them and seal. Snip a tiny opening off one of the edges and use this like a cake piping bag - piping the desired amount of peanut butter inside each date. it makes it so much easier, faster, and less messy!
The amount of peanut butter used will vary depending on the date size and your desired level - I like to stuff mine pretty full!

Ingredients
- 2 Pounds (or 24-36 ounces) Fresh Medjool Dates - pits removed
- 1-2 Cups Natural Peanut Butter
- Flaked Sea Salt
Instructions
- Slice each date down the middle (like a hot dog bun) and remove the pit and end stem. Open up so the inside is exposed.
- Pour some peanut butter into a zip-top bag. Seal shut and snip a tiny end off one of the edges creating a piping bag. Pipe out ½ - 1 teaspoon of peanut butter (depending on how big or small your date is) and stuff the inside of the date.
- Place on a baking sheet lined with parchment paper and repeat with the remaining dates.
- Sprinkle sea salt on top and place in the freezer for 30 minutes.
- Once frozen, place in a freezer-safe bag or container and keep in the freezer. Enjoy frozen!
