Description
There is nothing that tastes like summer more than an old-fashioned cobbler. Southern blackberry cobbler is the perfect dessert to serve during the warm months when berries are at their in-season peak. This cobbler is a Southern classic, made with fresh blackberries and a few pantry and fridge staples. It is oven-baked for 40 minutes, resulting in a warm sweet, comforting treat that pairs perfectly with a scoop of ice cream. Yields enough for 8-10.

- 1 Stick of Butter
- 2 Pints Fresh Blackberries (roughly 4 Cups*)
- 1/2 Cup of Sugar
- Juice of 1/2 Lemon + the zest
- 1 Cup of Flour
- 1 Cup of Sugar
- 1 Cup of Cream
- 1 Cup of Milk
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Vanilla Bean Paste (or 1 Teaspoon of Vanilla Extract)
- 1/4 Teaspoon Salt
Instructions
- Preheat oven. Preheat the oven to 375 degrees.
- Melt the butter. Place butter in a 9x13 baking dish. Place in the preheated oven for 10 minutes to fully melt the butter.
- Make fruit filling. In a bowl, add blackberries, sugar, lemon juice, and zest. Mix to combine fully.
- Mix together the batter. In another large bowl mix together flour, sugar, cream, milk, baking powder, vanilla, and salt. Whisk until fully combined. This should be a runny batter consistency.
- Pour them together in a pan. To the hot pan with melted butter, pour in batter into the pan, then add the blackberries on top. There is no need to mix or stir. Just pour the batter on top of the melted butter, then the blackberries. Everything will be baked evenly in the oven.
- Bake. Bake for 40 minutes or until golden brown on top. Remove from the oven and let cool for 10 minutes.
- Serve. Serve with vanilla bean or homemade whipped cream ice cream and enjoy!

- Store leftovers wrapped tightly with plastic wrap in the fridge for 3-4 days.
