Y'all! These summer apps are KILLING THE GAME! I mean......can we just live off corn peach & jalapeño burrata toast and this cheesy bacon-wrapped plantain bites with guava crema dip all summer, please? I wouldn't be upset with it. Pour me a glass of vino and I am one happy camper!

These plantain bites are so quick and easy to make and I can't get enough of them. I am pretty sure Justin ate his weight in them as I was recipe testing.

A couple of weeks ago I went to Orlando to watch my sister in law compete in Miss US International, and before our flight back we went to a Cuban restaurant in Disney Springs. We ordered these bacon wrapped plantains as an appetizer and I think my life was immediately changed.

Out come small bites of heaven - soft plantains cozied up under crispy bacon and hiding warm queso fresco underneath that gave you all the feels! It was served with the guava cream that was just a little sweet and the perfect flavor balance to the salty bacon and queso.

Y'all, I'm not kidding when I say we devoured these in 2.5 seconds and promptly ordered a second round.

I knew I had to recreate these when I came home and they would be a huge hit!

Ingredients Needed

  • Plantains - more on the ripe side - yellow with brown spots
  • Queso Fresco
  • Bacon

Ingredients for Guava Crema

  • Guava Paste
  • Crema Mexicana
  • Water
  • White Vinegar
  • Salt & Pepper

How to Make

  1. Preheat the oven to 375 degrees. Line a baking sheet with foil to use for the plantains.
  2. Peel the ripe plantains and slice in about ¼" chunks/slices. Lay on the baking sheet.
  3. Dice queso fresco in cubes about the size of the plantain bite and lay on top.
  4. Slice the pound of bacon in half so now that each slice of bacon is 2 pieces.
  5. Wrap the ½ piece of bacon around the plantain and queso. Place one end of the bacon on the bottom and continue to wrap over top and around the entire piece and lay back on the baking sheet (both end pieces should be on the bottom of the plantain bite).
  6. Place in the oven and bake for 25-27 minutes.

How to Make Guava Crema Dip

  1. While the plantain are baking, put in crema Mexicana, guava, water, vinegar and salt, and pepper in a blender.
  2. Blend on high for 1 minute until creamy and everything is blended. Place in a small bowl.
  3. Enjoy with hot and fresh-baked plantain bites.

Ingredients

Scale
  • 2  Plantains (more on the ripe side - yellow with brown spots)
  • 4-5 Ounces Queso Fresco
  • 1 Pound Bacon

Guava Crema

  • 2 Ounces Guava Paste
  • ¾ Cup Crema Mexicana
  • 2 Tablespoons Water
  • 2 Tablespoons White Vinegar
  • Salt & Pepper


Instructions

  1. Preheat the oven to 375 degrees. Line a baking sheet with foil to use for the plantains.

Notes

  • Plantain bites are best enjoyed hot/warm right out of the oven. Leftovers for the plantains and the crema can be kept covered in the fridge for 2-3 days.
