I get tired of our weeknight dinner rotations very easily. Even though I am a "food blogger" and Southern cook, I get stuck making the same things and get SO TIRED of them. Plus having our first baby really threw me for a loop in all areas and dinner time/meal planning was a big one too.
Any time I absolutely do not want to be forced to eat chicken AGAIN - an easy salmon dish is my go-to to switch things up. We love baked salmon sushi bowls and a sheet pan quesadilla for a quick dinner, but this maple dijon salmon seriously is so freaking easy that anyone can do it.
All you will need to do is whisk together Dijon mustard, maple syrup, soy sauce, garlic, smoked paprika, salt, and pepper in a little dish. Lay your salmon out on a banking sheet lined with foil, brush the sauce over top of the salmon, and bake at 375 for 20 minutes until flaky and tender - then top with some green onions, sesame seeds, and a squeeze of lemon juice. Walaa!
Serve alongside just some really simple white rice, my go-to veggie - canned green beans, or a simple salad. Whatever you want to round it out. This is perfect for those weeknight quick dinners but also easy enough to double or triple the recipe to serve to friends and family who are coming over for dinner!

Key Ingredient Call-Outs
- Salmon - fresh salmon is best for this recipe. I usually get a big thing of it at Costco but wherever you get your seafood locally is perfect.
- Garlic - I like to use a garlic press* for this to get it nice and fine to mix in well with everything.
- Optional toppings - these are totally not necessary but I think just give it that extra oomph of flavor. Sprinkling the the tops after baking with sliced green onions, sesame seeds and a squeeze of lemon just gives that extra something something and helps round out all the flavors.
Preparation
PRO TIP - after being lazy one too many times while making this, save yourself the trouble and spray your baking sheet that is lined with foil with either cooking spray or olive oil so the salmon doesn't stick - especially if you have skin-on salmon. I have skipped this step one too many times and always get so aggravated with myself after when I am trying to scrape it off lol.
This recipe yields enough for 4 people and is easily doubled or tripled for guests or to make enough for lunches throughout the week. This makes great leftovers and keeps in the fridge for 3-4 days. Justin and I love to eat this cold, flaked-over rice for lunches throughout the week too!

Ingredients
- 1 ½ Pounds Salmon
- 2 Tablespoons Dijon Mustard
- 2 Tablespoons Maple Syrup
- 1 Teaspoon Soy Sauce
- 2 Garlic Cloves, minced
- ½ Teaspoon Smoked Paprika
- ¼ Teaspoon Pepper
- ¼ Teaspoon Salt
- Green Onions, Lemon Wedges, and Sesame Seeds for garnish
Instructions
- Preheat the oven to 375 degrees.
- Line a baking sheet with foil and place the salmon on top.
- In a small bowl whisk to combine the Dijon mustard, maple syrup, soy sauce, minced garlic cloves, smoked paprika, pepper, and salt.
- Pour the mixture over top of the salmon and spread out evenly to coat.
- Place in the oven and bake for 15-20 minutes. The internal temperature should be 145 degrees and the salmon will be tender and flaky.
- Remove and sprinkle with green onions on top, a squeeze of lemon juice, and a sprinkle of sesame seeds. Serve immediately.

Hi Kathryn - there isn't any panko called for in this recipe. But my Salmon Sushi Bowls have some in it and it is added at the end for a crunch!
