There are times when I stop dead in my tracks in awe of how good a recipe is. Listen. I am a foodie. #obviously I don't like bad food...clearly. But when something leaves me speechless, it is truly special. Easy garlic knots made with the base base dough has this chokehold on me too, but these stuffed bagel bites...they get me on a deep level.

I am a lover of carbs and cheese. Now if you make a salty carby snack bite-size AND also stuffed it with warm melty cheese.......

STICK A FORK IN ME! I am done! These little bite-sized nuggets of gold are everything AND so easy! It is one of my go-to snacks, and my toddler is now a big fan too. Let me show you how I like to make them in my own home.

Form the dough into a round ball. Using a knife or bench scraper, slice the dough evenly down the middle. Then split each half in half. Finally, cut each quarter into 4 equal-sized dough pieces. This will give you 16 equally-sized dough balls.

Remove the cream cheese from the fridge (it helps to keep it chilled to make it easier to cut). Slice 1 ounce of cream cheese off the block. Cut down the middle longways, making 2 long strips of cream cheese. Then cut into 4ths. This will give you 8 small cubes. Repeat with the other ounce of cream cheese.

⭐️ PRO TIP ⭐️- I like to wear kitchen gloves and use my hands to mix the last little bit of dough at the end and throughout the stuffing process.

After making this bagel bites recipe so many times for myself and friends, I personally think these are best fresh and warm (similar to pigs in a blanket with little smokies). The middle stays melty that way. If you have leftovers, just pop them in the microwave for a couple of seconds to warm back up and bring them to life again.

Description

These homemade chewy everything bagel bites capture all the best parts of a toasted bagel in bite-sized form! Made with just 6 simple ingredients and built on my easy 3-ingredient Greek yogurt pizza dough, each one is stuffed with a creamy center of cream cheese, brushed with egg wash, sprinkled with everything bagel seasoning, and baked until golden at 375°F. Perfect as a snack or party appetizer-just be warned: you won't be able to eat just one!

Ingredients

Scale
  • 1 Cup Flour
  • 1 Cup Non-fat Plain Greek Yogurt
  • 1 Teaspoon Baking Powder
  • 2 Ounces Cream Cheese
  • 1 Egg
  • Everything Bagel Seasoning

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a large bowl, add the flour, Greek yogurt, and baking powder. Mix with a spatula until everything comes together. This is a thick and sticky dough. I like to put on kitchen gloves and use my hands to mix the last little bit at the end.
  3. Sprinkle the counter with some flour and dump out the dough onto the floured surface. Knead the dough for about a minute with your hands, adding more flour if you need to prevent it from sticking to the counter.
  4. Form the dough into a round ball. Using a knife or bench scraper, slice the dough evenly down the middle. Then split each half in half. Finally, cut each quarter into 4 equal-sized dough pieces. This will give you 16 equally-sized dough balls.
  6. Take a dough ball and flatten it into a flat circle. Place a cube of cream cheese in the middle. Bring all the sides up around the cream cheese and use your fingers to pinch the edges together, sealing the dough ball. Roll around in your hands so that the dough is a round ball. Repeat with the remaining 15 dough balls.
  7. Place the filled balls on a baking sheet lined with parchment paper. Place an egg in a small bowl and whisk. Use a pastry brush to brush the tops of each dough ball.
  8. Sprinkle each egg-washed dough ball with everything bagel seasoning. Use as much or as little as you prefer, but I like a lot on top.
  9. Place in the oven and bake for 25 minutes.
  10. Remove once finished. Let cool for 5 minutes, then enjoy!

Notes

  • These are best enjoyed warm. You can enjoy it at room temperature, the cream cheese just won't be melty and warm. If you keep leftovers and want to warm back up, pop them in the microwave for 5-10 seconds.

  1. Made these with Gluten free flour (cup4cup) and they were amazing! So happy they turned out and I have the taste of everything bagels back in my life (it’s been about 15 years)!

    1. Yes, definitely. Make it completely and let it cool. Put them on a baking sheet and flash freeze for 30 minutes and then store them in a freezer-safe bag for 3-4 months. Thaw in the fridge for 24 hours - pop in the microwave for 10 seconds to warm, if desired.

  2. I made this batch X3 each time. I found the ratio of the dough/cream cheese was a bit off (too doughy) I made a second batch back to back and I cut the dough balls in half again after I already had 16.

So now I have 32 for the X3 recipe.

Same amount of cream cheese to each smaller dough ball though. My second batch came out better, and the ratios were a more level playing field. Very happy with these, I usually go to Dunkin every morning and buy these but my monthly Dunkin bill is well over $250 and I wanted to save some money where I could.

    1. Hi Pat, thanks for taking the time to read this recipe and comment. Did you try making it? It actually isn't a joke - did you see the pictures included of the dough? It does come together and works, otherwise, this would not be posted as a recipe. It makes a quite delicious and chewy dough that we use as pizza dough as well - and it is quick and easy! I hope you get a chance to make these because they are some of our favorites and a fan fav at FSS!

      1. So is there a trick or a certain brand of yogurt you use because I did try to make these (after watching videos of people successfully making them) and mine were a sticky mess! It was so bad I ended up just throwing the whole thing of dough away. It was so sad. I want this to work but I can’t figure out what I did wrong.

        1. Oh I am so sorry Nicole! That is disappointing! I know that different brands can have different "thicknesses" and some are more "runny" than others - so maybe that was it? I typically use Fage plain nonfat. I bet adding some more flour in if the yogurt is on the runner side would help too. I have never had that issue before so I hope it helps problem solve and it turns out for you next time! Thanks for asking.

  3. Really tasty, thank you. I only had regular (homemade) yogurt and didn’t want to wait/strain, so subbed sour cream. I put some seasoning on my counter and pressed the dough rounds into and the seeds stuck well without the egg wash. I served for a light lunch with smoked salmon and sliced tomatoes. I briefly froze the cheese and think refrigerated might be more malleable but they still rolled and baked well with no leaks. Egg wash would probably make them shine brown better but they still looked great. Considered encasing a small bit of salmon with cheese but didn’t want to overcook the fish. Will make again (and again and again).

    1. Wow! Martha, thank you so much for making this recipe and then leaving a comment - pairing it with the smoked salmon sounds delicious! So glad you like them and will be making them again!

  4. these are AMAZING!! i’ve been obsessed with bagels lately and wanted to change it up a bit. super easy recipe with a quick bake and cool time. thank you for your service to mankind 🫡

  5. I ended up just using self rising flour and the Greek yogurt for the dough. But made mine bigger 8 balls per the cup to cup ratio. And I double the amount of cream cheese about a 1in by 1/2 inch cube. Kids Lobe them. They call them bagel bombs!

    1. Haha that is a great name! Bagel bombs is amazing - thank you for sharing how you made them work for you and your family - I am so glad y'all loved them! They are one of my favorites too.

  6. I have been meaning to try the 3 ingredient dough for a while, and when I found this recipe, I decided today was the day. These turned out better than I ever thought! I wanted something my daughter could grab and go for breakfast in the mornings and I believe these will do the trick.

    1. Hi Marianne! I am so glad you liked this recipe and it turned out for you! It's one of our favorites and go too's. So quick and easy and good! Thanks for making!

    1. Definitely, you can make them the night before, wrap them in plastic wrap and store them in the fridge then bake when needed the next day. Hope this helps!

    1. I am glad you enjoyed it. I am unfortunately not an expert in diabetic friendly recipes - there are lots of other blogs and resources out there that I am sure would be super helpful!
