    Oven-roasted sweet potatoes with pecans are the perfect balance of cozy and classy, making them a hit for weeknight dinners and holiday gatherings. Tossed with olive oil, a drizzle of maple syrup, and a sprinkle of cinnamon - roast them in the oven at 400°F for 30 minutes. Finished with a handful of Southern pecans for that irresistible crunch, this dish brings a warm, sweet flair to your table-simple, flavorful, and oh-so-southern! Yields enough for 6.

    Seriously though, here in my Southern home kitchen and Fueling a Southern Soul, we are all about some sweet potatoes. From your traditional holiday sides like sweet potato souffle and savory apps like 2 ingredient sweet potato biscuits with country ham or irresistible desserts like sweet potato dessert dip .. we love them all!

    But today I am just keeping it simple. When I make sweet potatoes for dinner for my family, 90% of the time I am just oven-roasting them. It's uncomplicated and you don't have to think about it...and I never measure. I just cube up the potatoes, spread them out on a baking sheet lined with parchment paper, and drizzle some olive oil and maple syrup on. Toss with salt and cinnamon to coat and roast in the oven. This time I also tossed on some chopped pecans during the last little bit of the roasting process because I had them left over from a recipe and it was delicious! The perfect balance of savory and sweet, soft and slightly crunchy.

    It was a big hit so let me show you just how easy it is!

    Start by cubing up your sweet potatoes in about an inch-ish in size.

    Add to a baking sheet lined with parchment paper along with your chopped pecans.

    Drizzle with olive oil, maple syrup, salt and cinnamon.

    Toss all together and roast at 400 degrees for 25-30 minutes, stirring halfway through.

    Add to a serving bowl and serve immediately while warm!

    While testing this recipe, I tested it by roasting the entire time WITH the pecans and then adding them at the last 10 minutes. To make this recipe as easy as possible, I found adding them at the beginning worked well ONLY IF you stirred halfway through (or more if you wanted). This will help move the pecans around so as not to burn by roasting in one area. I did burn a batch and burn pecans are simply no good! You can add the last 10 minutes if you want, but again, I wanted to make this simple and easy and I just like tossing everything together because I am usually doing 1827 other things while also trying to get dinner on the table...aren't we all! 😉

    Ingredients

    Scale
    • 3 Pounds Sweet Potatoes - cubed
    • 2 Tablespoons Maple Syrup
    • 1-2 Tablespoons Olive Oil
    • ½ Teaspoon Salt
    • 2 Teaspoon Cinnamon
    • ¼ Cup Pecans - chopped


    Instructions

    1. Preheat your oven to 400°F  and line a large baking sheet with parchment paper.
    2. Cube the sweet potatoes and add to the baking sheet along with the chopped pecans. Drizzle maple syrup and olive oil over the potatoes, then add the salt and cinnamon. Toss until the sweet potatoes are evenly coated.
    3. Place in the oven and roast for 25-30 minutes, stirring halfway through, until they're tender and starting to caramelize. Being mindful not to burn the pecans (hence stirring halfway through). 
    4. Transfer to a serving dish and enjoy!
