    Cast iron skillet smothered potatoes are the kind of Southern side dish that just feels like downhome comfort. Made with peeled and small cubed buttery Yukon gold potatoes, they cook up with crispy edges but soft centers, seasoned simply yet full of big flavor. It's an easy, no-fuss recipe that proves the best dishes don't need much...just a skillet, a few pantry staples, and a little Southern love.

    Y'all, what Southerner doesn't love a good cozy potato dish? Like a pile full of creamy mashed potatoes next to bacon wrapped pork tenderloin and some green beans?! I meeeannnn .... just put us into food coma heaven, right?!

    These smothered potatoes are simple but just downright cozy. They take a little time to cook up to perfection, but don't let that steer you away. It's a simple dish that can cook while you get the rest of dinner together (or lets be honest, do dinner while also doing a load of laundry, helping the kids, picking up the kitchen, and juggling a bunch of things at once because #reallife). But at least dinner will be good!

    Place your bacon grease and butter into a cast iron skillet and turn on medium heat to begin to melt.

    ⭐️PRO TIP⭐️ - don't skimp on the amount of fat used in this recipe. After testing, I personally found the combo of bacon grease and butter was a good combo of flavor but enough to cook the veggies so that they wouldn't stick to the bottom of the skillet. Also, making sure to stir often will help prevent the veggies from sticking.

    Sauté for about 5 minutes, just to soften, stirring often.

    While those are cooking, peel and dice your potatoes. Dice into small, even bite-sized cubes for quick cooking.

    Add them to the skillet with the peppers and onions.

    Add in the seasonings and stir to mix everything together. Cook for about 10-15 minutes - again stirring often. You want the potatoes to get some color on them and a little brown and crispy.

    ...then cover with a lid and turn the heat to medium low. Let cook for 25-30 minutes (stirring about 2-3 times) to cook the potatoes fully until they are soft and tender.

    Description

    Cast iron skillet smothered potatoes are the kind of Southern side dish that just feels like downhome comfort.     Ingredients

    Scale
    • 2 Tablespoons Butter - divided
    • 1 Tablespoon Bacon Grease
    • 1 Small onion - diced
    • 1 Medium Bell Pepper - diced
    • 2 Pounds Yukon Gold  Potatoes - peeled and diced
    • 1 Teaspoon Salt
    • ½ Teaspoon Pepper
    • ¼ Teaspoon Paprika
    • ⅛ Teaspoon White Pepper
    • ½ Cup Chicken Broth


    Instructions

    1. In a large cast iron or heavy-bottomed skillet, melt butter or bacon grease over medium heat. Add onions and pepper, and cook for 5 minutes until soft.
    2. While those are cooking, peel and cube the potatoes.
    3. Add in the potatoes and seasonings. Cook for 10-15 minutes, stirring occasionally, to get some brown crispy color on them.
    4. Add in the broth. Turn the heat to medium-low and cover the skillet with a lid. Let potatoes steam/smother for about 25-30 minutes, stirring occasionally so as not to stick to the bottom of the pan, until fork-tender.
    5. Serve hot and fresh with more salt and pepper if desired.
