Ok, hear me out. My sister and I totally agree that homemade rice krispie treats are totally underrated. Like, they are so simple to make and honestly freaking delicious. So when I had some leftover chocolate chex cereal from another recipe during the holidays - I had the thought, why not make these into krispie bars too.

And y'all...YUM! We did not grow up on sweet cereals in our house, so to my grown up self this feels like such a fun treat! Made in just 10 minutes on the stove, we are putting a spin on a classic dessert treat, and I know y'all are going to love it too!

    How To Make

marshmallows in a large pot on the stove
Add butter and marshmallows to a large pot. Set on the stove on medium heat.

Stir constantly until the butter melts and is mixed in with the marshmallows. The marshmallow mixture will be silky smooth, and it will take about 5 minutes.
Chocolate Chex Marshmallow Bars pressed into a pan
Remove from the heat and add in the Chex cereal. Stir constantly until the marshmallow mixture evenly covers the chocolate Chex cereal.
Pour into the greased baking pan and press down firmly. Let cool and set for 5-10 minutes.

PRO TIP: When spreading the marshmallow Chex bars into the pan, spray your spatula with non-stick spray to help you spread them out. The marshmallows are obviously very sticky and can be difficult to spread without sticking to everything. Spraying non-stick spray on the spatula will help.

Once cooled (which ps...I wouldn't blame you for sneaking bites of it warm because that's honestly the best!), slice into 12 bars, place on a platter, and enjoy!
