    Easy Strawberry Shortcake

    Justin and I have a few desserts we make on the regular during the summer and this Easy Strawberry Shortcake is one of them. It is light, cool, refreshing, quick and easy.  Nothing special or fancy and incredibly simple to make last minute for company coming over for dinner.

    I like making our strawberry shortcake with angel food cake. You can buy the box mix from your local grocery or the pre-made version from the bakery, whichever is easiest for you. I have yet to master the homemade version so I stick with the box...for now. 😉 I prefer this over a shortbread biscuit style that can also be used for shortcake. The sponge soaks up the juices nicely and I enjoy the light delicate texture of the cake, strawberries and whipped cream together.

    This requires little assembly and time. Make the cake according to the box. Easy. Simple. Done.

    While the cake is cooking, wash and dice strawberries into a bowl. Sprinkle with granulated sugar, wrap with plastic wrap and stick in the refrigerator for 1-6 hours (I have even been impatient and waited 30 minutes, it doesn't have as much juice if you do that, but it works if you are desperate or can't wait that long).

    Slice the completely cooled cake, place a couple spoonfuls of strawberries with juice and a generous serving of homemade whipped cream and wha-laaa…you have dessert.

    Easy, light, fresh and should be added to your summer dessert routine on the regular!

    Description

    Enjoy this Easy Strawberry Shortcake dessert perfect for the summer. This recipe is foolproof and a go-to for the warmer months!


    Ingredients

    Scale
    • 1 box of angel food cake mix
    • 1 pint of strawberries, diced
    • ¼ cup sugar
    • 1 batch of homemade whipped cream

    Instructions

    1. Make the angel food cake according to package directions. Let cool completely before removing and placing on a cake stand.
    2. While the cake is cooking, wash and dice the strawberries. Place in a bowl, sprinkle with sugar, toss and place in refrigerator for 1-4 hours.
    3. Assemble cake, strawberries, whipped and enjoy!
