5-Minute Dill Pickle Dip with Cream Cheese

Y'all if you're a pickle lover, this dill pickle dip is about to become your new favorite summer dip! Made in just one bowl with cream cheese, sour cream, Grillo's pickle spears, and the secret ingredient...Trader Joe's dill pickle seasoning. Serve it chilled with salty kettle chips for an easy snack or party dip made in 5 minutes. I promise you, y'all won't get tired of this one!

I cannot with this dip y'all. Like, I cannot stop eating it!

We are kicking off a new series this summer that is FUN - a summer dip series. Here is the criteria

  1. It must be able to be made in 1 bowl
  2. It must be served cold - we are big cold dip fans at FSS!
  3. No cooking/minimal cooking (for 1 recipe) required
  4. 100% irresistble and that you can't stop eating

That's it. Those are the simple requirements for this new summer series, and we're starting out with my favorite one!

I love dill pickles on anything and everything and in every single form. So to be able to have it in a dippable form is a dream!

After running through several recipe tests - I found the secret ingredient - the new dill pickle seasoning from Trader Joe's (and don't worry, if you don't have it, there is a substitution in the recipe card below - I got you!).

And guess what?! It's even better the next day as the flavors have set and been able to marry together. Eat this with your favorite salty and crunchy kettle chip. Let me show you how easy it is to throw together!

Leave the cream cheese out on the counter for at least 30 minutes to soften, then add to a bowl. Trust me, after many many MANY times of not doing this, the recipe will be fine taste-wise, but you will never be able to whip the lump completely out of a cold cream cheese - I have tried, haha!

Whip the cream cheese with a hand mixer just for 30 seconds or so until it's all smooth and creamy with no lumps. This just makes the rest of the dip super smooth and easy to mix together.

Add in the sour cream.

Chop them up real small...

...and add them and some pickle juice to the bowl. Give it a good stir and pop it in the fridge for 30 minutes to chill really well.

Ingredients

  • 8 ounces cream cheese - softened
  • 8 ounces sour cream
  • 2 teaspoons pickle juice
  • 1 teaspoon Trader Joe's dill pickle seasoning*
  • 1 teaspoon fresh dill - chopped
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper
  • 1½ cups Grillos's dill pickle spears - finely diced*


Instructions

  1. In a large mixing bowl, add the softened cream cheese. Using a hand mixer, beat until smooth and no lumps remain.
  2. Add the sour cream, pickle juice, and spices. Mix until smooth and well combined.
  3. Fold in the diced dill pickles using a spatula.
  4. Cover and refrigerate for at least 30 minutes before serving for the best flavor.
  5. Serve cold in a bowl and enjoy with your favorite brand of kettle potato chips.

Notes

  • If you do not have access to getting the Trader Joe's dill pickle seasoning, just sub in a teaspoon of garlic powder and an extra teaspoon of the fresh dill
  • You can use any dill pickle brand or shape you like; I just prefer the Grillo's brand and found dicing the spears to be easy. 
  • Store covered in the fridge for up to 3 days.
