Few foods are as instantly recognizable, or as deeply rooted in Southern entertaining that I have grown up knowing, as a good bowl of pimento cheese. It's loved everywhere, from backyard gatherings to the iconic Masters pimento cheese sandwich recipe served each spring in Augusta.

If you've ever attended a bridal or baby shower south of the Mason-Dixon line, chances are you've enjoyed pimento cheese tea sandwiches. Soft white bread (always white, never wheat!), crusts trimmed, sliced on the diagonal, and served as a dainty but irresistible bite. They're a simple way to turn a classic cheese spread into something that feels special.

These 10-minute sandwiches are perfect for showers, holiday spreads, picnics, and make-ahead entertaining. You can prep them in advance, keep them chilled, and serve with ease, just like my homemade sausage balls with pimento cheese, another Southern favorite that pairs beautifully on any party table.

PRO TIP: You will need a serrated bread knife* when preparing these sandwiches. This will make it super easy to trim the crusts off and slice down the middle without squishing the bread.

Spoon on a pimento cheese spread on top - you can add a generous amount or just a little depending on your preference.

Gently cut the crust off with a serrated knife, making a small square sandwich. Move the knife back and forth when cutting - do not press straight down - that will help to not squishing the sandwich.

Gently slice on the diagonal with that same back-and-forth sawing motion so as not to squish the sandwich.

To note: I put on a generous amount of pimento cheese in each sandwich. If you would like less, put about ¼ of a cup of pimento cheese on each - this will yield a thinner sandwich and will give you more - around 14/16 triangles.
