When you think of summer what do you think of? Pool days, staying up late, going on a beach vacation, BBQ's in the backyard and the smell of the grill. All the goodness! BBQ Chicken Cobb Salad with Herb Yogurt Dressing is a salad that wraps up those smells and feelings in one yummy bite!

This is my favorite time of year for food. Fresh veggies from the garden, juicy watermelon dripping down your chin and ripe berries bursting with flavor you forgot they had over the dreary winter months. All you need is a grill for your kitchen in the summers and everyone is happy!

The food is light, flavorful and everyone has their favorite things in the summer that they can't get enough to eat.

I love an easy salad but always firmly believe that no salad should ever be boring! Like ever! If you need more proof you must check out these drool-worthy salads we have done on a regular basis around here:

My sweet husband is the grill master around here and never lets the chicken get dry on the grill - bless him! I marinated this chicken with Kentucky Bourbon BBQ sauce I found at Kroger (it is delicious!) but any of your favorite BBQ sauces will work.

The base of the salad is tender butter bib lettuce. If you can't find this, any lettuce you prefer will do, but the light tender flavor of this I think perfectly complements each flavor.

Top it with hard boiled eggs, crisp bacon, juicy cherry tomatoes, and fresh mozzarella. Prep the eggs and bacon ahead of time so you can just assemble and go once the chicken is grilled and ready.

Oh, the dressing! If you aren't making your own dressing then you are missing out! It is unbelievably easy, once you do it you will never go back to store-bought. Add Greek yogurt, olive oil, lemon juice, and all the herbs & spices to a blender. Blend on high, taste to see if it needs more salt & pepper, and wa-laa! You have a delicious homemade dressing that can be used for more than just this recipe in less than 2 minutes.

Description

BBQ Chicken Cobb Salad is the perfect salad for summer. Bursting with fresh flavors, this salad is going to be your new favorite!


Ingredients

Salad

  • 2 Heads of Bib Lettuce

  • 4 Hard Boiled Eggs - peeled and sliced

  • 6-8 Pieces of Bacon - sliced into bits

  • ½ Cup Cherry Tomatoes

  • ½ Cup Fresh Mozzarella

Chicken

  • 1 Pound Boneless Skinless Chicken Breast, Tenderloins or Thighs
  • ½ Cup BBQ Sauce
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper

Dressing

  • ½ Cup Plain Greek Yogurt
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Fresh Chives
  • 1 Tablespoon Fresh Basil
  • ½ Tablespoon Fresh Dill
  • 1 Garlic Clove
  • Salt and Pepper

 

 


Instructions

For Chicken

  1. Place the chicken in a large ziplock bag.
  2. Add in your favorite BBQ sauce and the spices. Close bag and move the chicken around so everything is well coated. Place in the fridge for an hour.
  3. Preheat the grill to 350 degrees. Once the chicken is ready to go, place on the grill. Grill a couple minutes on each side depending on the thickness of your chicken. Take off the grill once the chicken has reached 160 degrees (using a meat thermometer) and place on a tray covered with foil and let rest until ready to use. If using chicken breast or tenderloins, taking off right before it is finished allows it to keep cooking while resting and not dry out. If you are using chicken thighs, just grill until they have reached 165.

For Dressing

  1. In a blender, add in all ingredients. 
  2. Blend on high for 60 seconds until everything is well blended together.
  3. Taste to see if more salt and pepper are needed if so add and blend again.
  4. Once finished, pour into a mason jar or dressing container and place in the fridge until needed.

Salad Assembly

  1. Slice the bottom of the bib lettuce heads and then chop the rest of the headlong ways and down the middle, creating long thin strips of lettuce. Place in a large salad bowl.
  2. Peel and slice (or dice) hard boiled eggs and add to the salad bowl.
  3. Chop cooked and cooled bacon into pieces and add to bowl.
  4. Slice cherry tomatoes in quarters and add to bowl.
  5. Dice pieces of fresh mozzarella and add to the bowl.
  6. Finally, slice grilled BBQ chicken and add on top of the salad. Top with freshly cracked black pepper. You can add the dressing now, or serve everyone individually and allow them to dress as desired.
  7. Enjoy!

Notes

  1. The dressing can be made beforehand and can last in the fridge for 10 days.
  2. The salad toppings can be prepped a day or couple of days beforehand. You can have the hard boiled eggs cooked and peeled in the fridge as well as the bacon cooked and cooled beforehand to make assembling easy. If not, those things can be done while the chicken is grilling.
