    Sous Vide Orange Thyme Old Fashion

    We all know you can cook the perfect steak or make the yummiest egg bites with the sous vide. But did you know the sous vide had so many other wonderful uses....like infusions?! You're going to blow the bourbon lover in your life away with this Sous Vide Orange Thyme Old Fashion!

    What is a Sous Vide Infusion?

    Making your own liquor flavors and infusions is so simple with the sous vide!

    The process of sous vide cooking is cooking at a precise temperature in a water bath. Giving you perfect and precise cooking and control.

    The process of sous vide liquor infusion is cooking the liquor at a certain temperature and time in a mason jar thus preventing any evaporation of liquids or aromas. Resulting in a rich and flavourful infusion.

    You are able to control the time and temperature of each infusion.

    • For more subtle flavors, sous vide at a lower temperature for a shorter amount of time.
    • For bolder infusions, cook at a higher temperature for a longer amount of time.

    What Equipment Do I Need?

    The beautiful things about sous vide is that minimal equipment is required. And immersion circulators are small, making them a dream to store (hello not taking up much space in my cabinets!)

    You will need the following for this recipe (all Amazon affiliate links)

    • Immersion Circulator
    • Large Stock Pot or Cambro
    • Pint or Quart Mason Jars with New Seals and Rings
    • Canning Jar Lifter Tong (optional)

    Ingredients Needed

    • Bourbon - use your favorite bourbon you like to drink by itself. There are TONS of quality bourbons at amazing prices that will work great with this recipe. My bourbon-loving husband recommends - Elijah Craig, Evan Williams Single Barrel, Four Roses Single Barrel, Four Roses Small Batch, Old Grandad 114, and Buffalo Trace.
    • Thyme - fresh thyme is necessary for this recipe! The flavor infusion is way better than dried - plus easier to remove after.
    • Sugar - for just a hint of sweetness.
    • Orange - you will be using this for the juice AND peel for double the infusion flavor!

    How to Make

    1. Heat a water bath up to 150 degrees using sous vide.
    2. Combine all the ingredients in a mason jar sealed to just fingertip tightness. 
    3. Place in the sous vide bath and cook for 1 hour.
    4. Once finished, strain the bourbon infusion into a clean mason jar or cap liquid container. Discard the orange peel and thyme. Store in the fridge to chill.
    5. To enjoy, pour over ice with an orange peel, a dash of bitters, and a splash more bourbon if you like yours a little extra strong. 😉

    Frequently Asked Questions

    Can I Infuse Liquor Without a Sous Vide?

    Yes. you can. Infusions without sous vide are possible but take much longer. Most liquor infusions will take anywhere from 24-48 hours or 3-5 days depending on the flavors. If using nonperishable ingredients (such as dried herbs) you can infuse them at room temperature. If using perishable goods (such as fresh fruits) then store them in the fridge during the infusion process. For this recipe, place everything in a mason jar and store it in the fridge for 3 days. Strain and enjoy!

    How Long will Sous Vide Orange Thyme Old Fashion keep?

    Keep the infusion stored in the fridge for up to 2 weeks.

    Ingredients

    • 8 Ounces Bourbon - use your favorite drinking bourbon
    • 1 Sprig of Fresh Thyme
    • 4 Teaspoons Sugar
    • Juice and Peel from ½ Orange 

    Instructions

    1. Heat a water bath up to 150 degrees using sous vide.
    2. Combine all the ingredients in a mason jar sealed to just fingertip tightness. 
    3. Place in the sous vide bath and cook for 1 hour.
    4. Once finished, strain the bourbon infusion into a clean mason jar or capped liquid container. Store in the fridge to chill.
    5. To enjoy, pour over ice with an orange peel, a dash of bitters, and a splash of extra bourbon if you like it strong.
